Sodium bicarbonate is a salt in the form of a white crystalline powder composed of a sodium cation and a bicarbonate anion; a chemical compound with the formula NaHCO3. In cooking, sodium bicarbonate is largely used in the baking of cakes, breads and other fried foods. However it also has mildly disinfectant and medical properties, acting as an effective fungicide, and uses as an antacid to treat indigestion and heartburn when mixed with water and in mouthwash.
