It is neither caustic nor corrosive and occurs naturally in plants, fruits, and honey to name a few. Gluconic acid is produced by the fermentation of glucose, and it is non-toxic readily biodegradable. Gluconic acid is a poly hydroxy carboxylic acid, which gives it very versatile properties. The most outstanding property is its chelating power, even more so in alkaline solutions, where it surpasses other chelating agents. Gluconic acid is also stable at the boiling point but still easily degraded in wastewater treatment plants.
